Fresh milk contains between 12 and 14 % of solids. This means that a great percentage of the milk weight comes from water.

 

To remove such liquid part , and gain advantages such as a long shelf life and easiness of transportation of the product , it is essential to treat the milk gently in order to avoid the damage of its thermosentive substances like proteins and sugars.

 

The process of drying milk and its by-products like whey involves the following steps:

 

- Raw milk RECEIVING, COOLING and STORAGE

- PASTEURIZATION, SKIMMING and TITRATION of FATS

- CONCENTRATION, SPRAY-DRYING and AGGLOMERATION
